1 cup GF All Purpose Baking Flour
1/2 cup Almond Meal/Flour
1/4 cup Sugar
1 teaspoon Baking Powder
1 teaspoon Ground Cinnamon
1/8 teaspoon Sea Salt
1 teaspoon Almond Extract
1 tablespoon Water
1/4 cup Vegetable Oil
1/3 cup Honey
1/2 cup ALMONDS WHOLE SHELLED
Original recipe also included 1/4 cup Sugar but I deleted as many people said they are too sweet (also reduced honey from 1/3 cup to 1/4 cup).
Switched the cinnamon out for garam masala for a differnent twist
Preheat oven to 375°F. Lightly spray a cookie sheet with nonstick vegetable spray; set aside.
In a bowl combine the flours, sugar, baking powder, cinnamon and salt. In another bowl combine almond extract, water, oil and honey.
Add wet ingredients to dry ingredients and fold in the chopped almonds.
Form dough into balls and place on greased cookie sheet.
Bake 8-12 minutes until lightly golden. Let cookies set on baking sheet 10 minutes; remove carefully to cooling rack. Enjoy.
