1/2 cup peanuts lightly pan roasted
1/4 cup sesame seeds lightly pan roasted
2 ripe tomatoes sliced
1 cup cabbage shredded
1/4 cup cilantro chopped
1/8 onion chopped
3 tablespoons peanut oil
1 teaspoon sambal olek
1/2 lime/lemon juice
1/4 cup fish sauce (optional)
Infuse the peanut oil with garlic & tumeric (i.e., heat in pan together).
Crush or chop a handful of the peanuts.
Lightly pan roast the sesame seeds and peanuts (separately because of different times needed).
Chop tomatoes, cabbage, and cilantro.
Chop onion and rinse in water.
Mix chopped vegetables in bowl with cooled sesame seeds and peanuts.
Mix together peanut oil, sambal olek, lime juice, and fish sauce.
Mix dressing into salad.
Can also use or add blanched green beans, broccolli etc.
