Oatmeal Date & Nut Bars

Ingredients

1 cup butter softened

1 cup brown sugar lightly packed

1/4 cup white sugar

1/2 teaspoon salt

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups unbleached or all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

4 cups old-fashioned rolled oats or regular oats

8 ounces (1 package) chopped dates reserve 1/4 cup for the top

1 cup chopped walnuts reserve 1/4 cup for the top

Description

Our Oatmeal Date & Nut Bars are oaty, soft and chewy, with lots of sweet dates and crunchy walnuts. The dates, brown sugar and butter make them nice and sticky, and they taste like oatmeal heaven in delicious dessert bars!

Directions

Preheat oven to 350ยบ F and grease a 9" x 13" baking dish.

In a large bowl cream together the butter, sugars, and salt. Mix on low speed until blended, then on medium speed for an additional minute.

Add the eggs and vanilla extract. Mix on low speed until combined, then at medium speed for a minute, and then at high speed for an additional minute. The mixture should be pale and fluffy.

Add the flour, along with the baking powder, baking soda, and cinnamon and blend together on low speed.

Then add the oats and mix on low speed again, just until blended in.

Next add the chopped dates and walnuts, reserving about 1/4 cup of each for the top of the bars. Mix on low speed just until blended in.

Distribute evenly in baking pan.

Sprinkle the reserved dates & walnuts and press them into the dough.

Bake in a preheated oven for 30-35 minutes, or until the top and edges are golden brown and the center doesn't jiggle but is still soft.

Cool completely before cutting into bars.

Notes

When measuring the oats, make sure the measuring cup is level and not rounded. Because adding too many oats will make the bars dry.

Do not overbake, doing so will make these bars dry, and you want them to be nice and moist and sticky.

Store bars in an airtight container. These bars also freeze well for up to 6 months.
