Spicy Smoked Almonds

Ingredients

1 lb. almonds

1/3 cup sugar

1/2 Tablespoon kosher salt

1/8 teaspoon white pepper

1 teaspoon chili powder

1/4 teaspoon cayenne pepper

1 teaspoon Spanish style smoked paprika

1/2 Tablespoon garlic powder

1/2 teaspoon ground cumin seed

1 egg white

1 Tablespoon water

3 dashes Tobasco sauce

1/2 teaspoon Worcestershire sauce

Description

PREP TIME: 5 minutes
COOK TIME: 1 hour
TOTAL TIME: 1 hour 5 minutes

Directions

Preheat oven to 300 degrees. Line a cookie sheet with a Silpat mat or parchment paper.

Combine dry ingredients (minus almonds) in a bowl. Set aside.

In a separate bowl, whisk together water and egg white.

Add in Worcestershire sauce and tobasco, stir to combine.

Add in dry mixture and stir to incorporate.

Add in almonds. Stir to make sure they are evenly coated.

Spread onto prepared cookie sheet in an even layer.

Bake for 20 minutes. Turn almonds over.

Reduce heat to 275 degrees and bake for 45 minutes more.

Cool completely and transfer to an airtight container.

Notes

Could also work with peanuts or pecans.

A few different variations:
– maple syrup and cinnamon
– Worcestershire sauce and hot sauce
– curry powder
– garlic powder and oregano
