LCD – All Recipes, Salad
1/4 cup bulghur
2 tomatoes seeded and finely chopped
4 spring onions peeled and finely chopped
1 cup finely chopped fresh parsley
1/2 cup finely chopped fresh coriander
Combine all ingredients and chill for 1 hour before serving with the special dressing.
Special Dressing (DF NF, V):
1/2 cup unsweetened yoghurt
1/2 small cucumber grated
2 heaped tablespoons finely chopped parsley
2 heaped tablespoons finely chopped chives
2 tablespoons lemon juice freshly squeezed
2 tablespoons vinegar (apple cider or balsamic)

Combine all ingredients and chill.
